Simple tomato sauce

A simple tomato sauce made from store cupboard ingredients. Works well with pasta, pizza or as an accompaniment to grilled fish or meat.

Ingredients
- 1 tbsp olive oil
- 1 finely chopped medium onion
- 1 finely chopped large clove garlic
- 1 x 400g can chopped tinned tomatoes
- 1 tbsp tomato purée
- 1 good pinch dried oregano
- 1 tsp vegetable stock powder
- 1 pinch black pepper
- 1 pinch sugar
- 1 pinch salt
Instructions
- Heat the olive oil in a small saucepan and sweat down the the onions and garlic on a medium low heat for 5 minutes. They should be just getting a bit of colour.
- Add the tinned tomatoes, rinsing out the tin with a little water.
- Add the tomato purée, oregano, vegetable stock powder, black pepper and sugar. Simmer on a low heat for 20 minutes.
- Once cooked, check seasoning, adding salt to taste.
- Puree until smooth with a hand blender.
Notes
- Use the best quality tinned tomatoes you have.
- A little sugar helps counteract the acidity of the tomatoes and may not be required for more expensive brands of tinned tomatoes. I like to use jaggary, but white or brown sugar is fine.
