Ingredients

  • 1 tbsp olive oil
  • 1 finely chopped medium onion
  • 1 finely chopped large clove garlic
  • 1 x 400g can chopped tinned tomatoes
  • 1 tbsp tomato purée
  • 1 good pinch dried oregano
  • 1 tsp vegetable stock powder
  • 1 pinch black pepper
  • 1 pinch sugar
  • 1 pinch salt

Instructions

  1. Heat the olive oil in a small saucepan and sweat down the the onions and garlic on a medium low heat for 5 minutes. They should be just getting a bit of colour.
  2. Add the tinned tomatoes, rinsing out the tin with a little water.
  3. Add the tomato purée, oregano, vegetable stock powder, black pepper and sugar. Simmer on a low heat for 20 minutes.
  4. Once cooked, check seasoning, adding salt to taste.
  5. Puree until smooth with a hand blender.

Notes

  • Use the best quality tinned tomatoes you have.
  • A little sugar helps counteract the acidity of the tomatoes and may not be required for more expensive brands of tinned tomatoes. I like to use jaggary, but white or brown sugar is fine.
