Oat and sultana cookies are a classic treat that perfectly balances wholesome comfort with delicious sweetness. Ingredients
- 125 grams unsalted butter
- 100 grams light brown sugar
- 75 grams caster sugar
- 1 egg
- 1 tsp vanilla extract
- 150 grams plain flour
- 150 grams rolled oats
- 1 tsp baking powder
- 0.5 tsp bicarbonate of soda
- 0.5 tsp salt
- 150 grams sultanas
Instructions
- Beat sugar and room temperature butter until creamy.
- Add egg and vanilla extract mix well.
- Add the rest if the ingredients and mix into a dough.
- Split into 12 even sized balls and chill for 1 hour.
- Preheat oven to 200C or 180C fan.
- Once the cookie balls have chilled, place on lined baking trays and cooks for 12 minutes.
- After 12 minutes remove from oven and leave to cool down.
