Ingredients
- 240 grams plain flour
- 50 grams caster sugar
- 2 tsp baking powder
- 0.25 tsp salt
- 240 ml milk
- 2 eggs
- 2 tsp vanilla extract
- 50 grams unsalted butter
Instructions
- Sieve dry ingredients (flour, sugar and baking powder) into a bowl.
- In a separate bowl whisk milk, eggs and vanilla extract.
- Melt butter in a microwave for 30 seconds and whisk into wet ingredients.
- Beat wet ingredients into dry ingredients. The mixture should be smooth and thick, but don't beat too much.
- Heat a non-stick pan or griddle over medium-low heat and brush with a thin layer of butter or oil.
- For each pancake, spoon 3-4 tablespoons of batter onto the griddle. Cook until the surface of the pancakes have some bubbles and a few have burst, about 2 minutes.
- Flip carefully with a palette knife or thin spatula and cook until golden brown on the underside and cooked through, about 1-2 minutes more.
- Repeat for the remaining pancakes, keeping the cooked ones warm.
- Serve with berries and maple syrup.
Notes
- Don't over mix the batter as this works gluten in the flour and can lead to tough, chewy pancakes.
