Ingredients

  • 240 grams plain flour
  • 50 grams caster sugar
  • 2 tsp baking powder
  • 0.25 tsp salt
  • 240 ml milk
  • 2 eggs
  • 2 tsp vanilla extract
  • 50 grams unsalted butter

Instructions

  1. Sieve dry ingredients (flour, sugar and baking powder) into a bowl.
  2. In a separate bowl whisk milk, eggs and vanilla extract.
  3. Melt butter in a microwave for 30 seconds and whisk into wet ingredients.
  4. Beat wet ingredients into dry ingredients. The mixture should be smooth and thick, but don't beat too much.
  5. Heat a non-stick pan or griddle over medium-low heat and brush with a thin layer of butter or oil.
  6. For each pancake, spoon 3-4 tablespoons of batter onto the griddle. Cook until the surface of the pancakes have some bubbles and a few have burst, about 2 minutes.
  7. Flip carefully with a palette knife or thin spatula and cook until golden brown on the underside and cooked through, about 1-2 minutes more.
  8. Repeat for the remaining pancakes, keeping the cooked ones warm.
  9. Serve with berries and maple syrup.

Notes

  • Don't over mix the batter as this works gluten in the flour and can lead to tough, chewy pancakes.
